Productivity Tips for Bananas

It seems people don’t tend to peel bananas in the most efficient way. If you want to get to your banana quickly you should be peeling from the bottom the way monkeys do it, not from the top.

Chef makes great scrambled eggs

Just in case you have a need for more Gordon Ramsay now that his loud and disturbing  ”Hells Kitchen” reality TV show is over, or you’d like to observe that the total dick Chef,  is a persona and Ramsay can appear fairly human — or just want to make great scramble eggs for tomorrow’s breakfast take a look at this short video.

Here are Chef’s  high points:

  • Whisk the eggs in the pan, don’t mix them before
  • Salt and pepper the eggs in the pan
  • Don’t let them overcook, keep taking the pan on and off the stove
  • Treat them like risotto as in make them creamy and fluffy

  • Add a splash of hot sauce to the eggs in the pan while whisking for a little zing , Tabasco or Thai  Sriracha

French Fry Hack

I’m still working on making the perfect, at home, French Fries.

As I’ve written before, here are my 9 basic steps to making great shoestrings.

The basic steps in making French Fries are:

  1. Cut the potatoes – your choice on size and method, I’m fancy-shmancy so I use a mandoline and cut them to .5 cm (it measures in metric) – feel free to use a plain old knife and cut them to .25 inch.
  2. Soak cut potatoes in cold water for 10 to 15 minutes.
  3. Drain and dry well
  4. Cook the first time – around 360F until cooked by haven’t changed color (5 min-ish)
  5. Cool on paper towels
  6. Cook the second time around 365F until crisp (2- 3 mins)
  7. Dry on paper towels
  8. Salt to taste (if fancy-shmancy use sea salt)
  9. Eat, feed to baby, wife, corgi, parrots

I have trouble getting the cut potatoes dry enough after they been soaking in step 3.  Last night the science fair project continued.  I used a hair dryer to give the potatoes a final dry before throwing them in the oil.

Results?

Pretty darn good!

Life Changing Decisions: Going Vegan – Guest Post

French Fries 101 – How to make them at home

Call them French Fries or chips — I’m on a personal campaign to make perfect ones. To be exact, the ones I want to make are the really skinny ones, shoestring or matchstick.   I’ve done the research for you, so here’s what you need to know.
